Sažetak

Proizvodnja hladno presovanog ulja iz sirovog-osušenog semena tikve golice presovanjem na pužnoj presi na ovim prostorima je započela 90-ih godina prošlog veka. Ulje svojstvene arome sirovog-nepečenog semena predstavlja specifičan proizvod našeg podneblja. U radu su ispitane i prikazane promene senzorskih karakteristika, osnovnog hemijskog kvaliteta i oksidativne stabilnosti ulja u periodu od dve godine. Uzorci su dobijeni presovanjem semena tikve golice i semena sa ljuskom različite krupnoće u odnosu 3:2, kao i semena golice sa dodatkom pšeničnih mekinja u svojstvu drenažnog materijala. Dobijeni rezultati su ukazali na stabilan senzorski kvalitet u periodu do 12 meseci, nakon čega aroma ulja gubi na kvalitetu. Osnovni hemijski kvalitet ulja se postepeno pogoršavao, međutim kiselinski i peroksidni broj su sve vreme ispitivanja zadovoljavali zakonski minimum. Oksidativna stabilnost ulja određena Rancimat testom je dobra, iako je indukcioni period u ispitivanom periodu smanjen za 30 do 40%.
