Ekstrakcija ulja kukuruzne klice natkritičnim ugljendioksidom (SC-Co2) - sastav i kvalitet odmašćenog ostatka i proteinskog izolata

Sažetak

Ispitivana je ekstrakcija ulja iz kukuruzne Mice, dobijene iz industrijskog mokrog mlevenja kukuruza (skrobarska prerada), nadkritičnim ugljendioksidom. Rezultati pokazuju uspešno izdvajanje ulja ekstrakcijom nadkritičnim CO2 pri čemu u tretiranom materijalu zaostaje mala količina triglicerida. Laboratorijske analize ukazuju da ekstrahovana kukuruzna klica sa natkritičnim CO2 i proteinski izolat imaju veoma korisne hranljive i funkcionalne osobine (dobro balansirane esencijalne amino kiseline, prijatan miris, svetlo smeđu boju) i velike mogućnosti upotrebe u proizvodnji hrane kao dopuna proteinima.
