Influence of biological factors and production method on quality of vegetables

Abstract
Quality of vegetables encompasses a number of characteristics. Biochemical composition of vegetables is important from the nutrition point. Because of the large variety of vegetable species and cultivars, that are able to perform various functions in the organism, constitutive, energy-related and metabolic. Bioactive substances contained in vegetables make them more than just food, they become a medicine. Quality of vegetables is influenced by the biological specificity of species and cultivars as well as by geotechnical practices applied. It is feasible to induce changes in a number of characteristics. Presently, attention is focused on quality improvement of safe vegetables. Such vegetables are obtained by means of controlled production (conventional, integral, organic and sustainable). To increase the proportion of vegetables in the diet of the local population it is necessary to educate the consumers and instruct them how to formulate their demands to the producers.
