Pregled trendova u formulaciji funkcionalnog piva

Sažetak
U poslednje vreme, svest potrošača o uticaju ishrane na zdravlje stalno raste. Kao odgovor na to, danas je širom sveta povećana potražnja potrošača za inovativnim proizvodima. U tom kontekstu, tržište specijalnih piva je od skoro u centru pažnje. Pivo je jedno od najtraženijih niskoalkoholnih pića na svetu. Sadrži neka retka i važna bioaktivna, funkcionalna jedinjenja. Koristeći različitu opremu, tehnike i sastojke koji sadrže bioaktivna jedinjenja, postoji mogućnost formulisanja i proizvodnje različitih piva sa potencijalnim zdravstvenim prednostima. Pivare su prepoznale potencijal za potpuno novo tržište i počele da proizvode funkcionalna piva. Ovaj pregledni rad predstavlja detaljan pregled dostupnih podataka u ovoj oblasti. Neka od formulisanih piva su prisutna na tržištu, dok ostalo čine razvijene formulacije funkcionalnih piva koje su objavljene u naučnim časopisima ili su u vidu odobrenih patenata. Većina formulacija odnosi se na piva sa lekovitim biljkama koje se već koriste kao medicinsko bilje. U ovom radu su opisana i piva sa dodatkom gljive Ganoderma lucidum, grožđa, ksantohumola, kefira i probiotika.
