Pojava moniliformina u žitaricama

Sažetak
Plesni iz roda Fusarium često se javljaju kao kontaminenti žitarica (kukuruz, pšenica, ječam, raž i ovas) širom sveta. Moniliformin (MON) je mikotoksin koga proizvode plesni roda Fusarium, najčešće F. proliferatum, F. subglutinans i F. avenaceum. Pojava MON je zabeležena širom sveta, pri čemu je najveća detektovana vrednost (530 mg/kg) zabeležena u kukuruzu namenjenom za ljudsku potrošnju. Ograničene informacije o toksičnosti MON-a kod eksperimentalnih i domaćih životinja ukazuju na njegov potencijalni hematotoksični i kardiotoksični efekat na zdravlje ljudi. Nadalje, njegova stabilnost i ponašanje tokom prerade hrane je takođe slabo istražena, tako da se još uvek ne može sa sigurnošću izraziti stepen rizika izloženosti potrošača. Ovaj pregled sumira dostupne informacije o hemiji MON-a, toksičnosti, njegovoj pojavi u žitaricama, metodama detekcije i potencijalnim metodama za njegovu dekontaminaciju u hrani i hrani za životinje.
