Uticaj različitih smeša gasova na promene nekih mikrobioloških i hemijskih parametara u odrescima šarana (Cyprinus carpio) upakovanih u modifikovanu atmosferu

Sažetak
Cilj ovog eksperimenta je bio da se prati tok hemijskih, fizičko-hemijskih i mikrobioloških promena u odrescima šarana (Cyprinus carpio) upakovanih u modifikovanu atmosferu u toku petnaest dana skladištenja. Uzorci su podeljeni u dve grupe i upakovani u različite smeše gasova. A grupa uzoraka je upakovana u smešu koja se sastojala od 40% CO2 i 60% N2 a B grupa uzoraka u 100% CO2. Svi uzorci su skladišteni petnaest dana u strogo kontrolisanim uslovima pri temperaturi od +3°C. Ispitivanja su obavljena 1, 3, 6, 9, 13. i 15. dana. Ispitivani su pH, ukupan isparljivi azot, ukupan broj aerobnih mezofilnih bakterija i ukupan broj enterobakterija. Prosečna pH vrednost u uzorcima A grupe bila je najniža 15. dana skladištenja (6,30 ± 0,03), a u uzorcima B grupe najniža prosečna pH vrednost je zabeležena 9. dana (6,13 ± 0,06). Ukupan broj aerobnih mezofilnih bakterija je rastao u obe grupe uzoraka. U odrescima šarana upakovanih u modifikovanu atmosferu od 100% ugljen-dioksida rast ukupnog broja bakterija kože i mesa šarana bio je sporiji nego u odrescima upakovanim u modifikovanu atmosferu sa 40% ugljen-dioksida. Modifikovana atmosfera smanjuje ukupan broj enterobakterija, a najniža vrednost je dobijena kod odrezaka šarana upakovanih u modifikovanu atmosferu sa 100% ugljen-dioksida (petnaestog dana ispitivanja broj enterobakterija grupe B u mišićnom tkivu bio je log CFU/g 1,78 ± 0,08 a kože log CFU/g 1,96 ± 0,23).
