Promena boje mlevene začinske paprike (Capsicum annuum) tokom skladištenja

Sažetak
Uzorci mlevene začinske paprike sorte Aleva NK, sa dva lokaliteta skladišteni su na sobnoj temperaturi, izloženi dnevom svetlu. Kvalitet boje je određen merenjem ekstraktabilne boje, ASTA 20 metodom i merenjem površinske boje. Parametri kojima se definiše površinska boja (CIE Lab) najbliži su utisku koji se stvara pri opažanju okom. Tokom skladištenja uzoraka došlo je do negativne promene boje, tj. smanjenja sadržaja ukupnih pigmenata (opadanje ASTA vrednosti i promena "hue angle"-a od crvenih ka žutim pigmentima u CIE sistemu), čime je utvrđena korelacija između parametara površinske boje i sadržaja ukupnih pigmenata (ASTA).
