Sažetak
Mikotoksini su sekundarni metaboliti plesni koji mogu nastati na samom polju, ali i u periodu skladištenja žitarica. To su organske supstance koje ne izazivaju stvaranje antitela, te su ljudi i životinje trajno nezaštićeni od njihovog delovanja. Analiza prirodno prisutnih organskih komponenata u hrani, uključuje nekoliko ključnih koraka: uzorkovanje, ekstrakcija, prečišćavanje, koncentrovanje, razdvajanje, detekcija, kvantifikacija, konfirmacija i izveštaj. Svaka od ovih faza je izuzetno značajna i mora joj se pristupiti sa posebnom pažnjom, kako bi dobijeni rezultati analize bili tačni i precizni.
Abstract
Mycotoxins are secondary metabolites of mold which can be found in a field itself but also during cereals storage. They are organic meter which do not cause the formulation of antibodies, which makes people and animals continually unprotected against their influence. The analysis of natural present organic components in food asks for several key steps: sampling, extraction, purification, concentration, separation, detection, quantification and report. Each of these steps is of particular importance and must be treated with a great attention, so as to obtain the exact and precise results in the analyses.
