Sažetak
Pekarski proizvodi predstavljaju veoma osetljiv supstrat organskog porekla u kome se tokom uskladištenja odvijaju fizičko-hemijski procesi koji utiču na promenu kvaliteta, senzornih, hemijskih i hranljivih vrednosti. Raznovrsnost proizvoda kao i složen sastav predstavljaju poseban problem u vezi sa njihovom zaštitom. Važna je njihova proizvodnja na odgovarajući način, ali i čuvanje kvaliteta proizvoda. Da bi se to postiglo, neophodno je proizvode upakovati u odgovarajuću ambalažu koja će zaštititi proizvode od rasipanja kao i od promena uzrokovanih spoljašnjim uticajima.
