Heat processing energy sterilization and pasteurization: Environmental protection aspect
Heavy reliance of modern civilization on intensive energy consumption is probably the biggest problem from the environmental protection aspect. The strategy of sustainable development prescribes minimization of energy use per unit of product, as well as the research directed towards finding out possibilities for the use of alternative sources. The energy consumed is also an important economic category. Namely, the price of every product includes price of energy consumed. Energy consumption during heat treatment (sterilization and pasteurization) of meat products is only one, but characteristically segment of energy consumption for meat processing and production of meat products. This segment was discussed in the paper.
