Antibakterijska aktivnost mleka magarice rase domaći balkanski magarac na Listeria monocytogenes i Staphylococcus aureus

Sažetak
Cilj ovog istraživanja bio je ispitivanje antibakterijske aktivnosti sirovog mleka magarice rase Domaći balkanski magarac, na L. monocytogenes i S. aureus. Ispitivanje antibakterijske aktivnosti je izvršeno na veštački kontaminiranim uzorcima mleka, praćenjem promena broja ispitivanih bakterija tokom 8 sati inkubiranja na temperaturi od 38°C. Takođe je određen sadržaj lizozima i masnih kiselina u mleku magarice. Ispitivanje veštački kontaminiranih uzoraka je pokazalo inhibitorni efekat mleka magarice na obe bakterijske vrste. Sadržaj lizozima u analiziranim uzorcima mleka je bio u intervalu od 0.67 do 3.54 g/L. Od masnih kiselina sa poznatom antibakterijskom aktivnošću na Gram pozitivne bakterije, u najvećoj koncentraciji su bile prisutne linolna, oleinska i laurinska kiselina.
