Sažetak
Proizvodnja voća ima značajnu ulogu u razvoju srpske poljoprivrede. U strukturi proizvodnje voća, jabuke imaju srazmerno veliki udeo. Kao voćna vrsta pogodna za preradu i duže skladištenje, jabuka je tradicionalno prisutna u domaćinstvima u svežem ili prerađenom stanju. Jedan od vidova prerade jabuke koji bi mogao biti dobra solucija za mala porodična poljoprivredna gazdinstva je proizvodnja čipsa od jabuke. Implementacija pomenute prerade je pogodna kako iz ugla veličine potrebnih investicionih ulaganja i relativno skromnih tehnoloških zahteva, tako i u pogledu kratkog povrata uloženih sredstava, ili mogućnosti da se uposle instalirana oprema i članovi gazdinstva van kampanje prerade jabuke. Sa druge strane, prerada jabuke bi sigurno obezbedila stvaranje dodatne vrednosti i kontinuitet prihoda na gazdinstvu, što će primarno imati pozitivan uticaj na njegovu održivost. Osnovni cilj rada je da razmotri snagu generisane marže pokrića u proizvodnji čipsa od jabuke na nivou malih gazdinstava. Istraživanje se baziralo na jednom proizvodnom ciklusu (tromesečnoj kampanji prerade jabuke), pri čemu se prikazani podaci i rezultati odnose na 2018. godinu. Shodno dobijenim rezultatima proističe zaključaka da prerada jabuke u čips može predstavljati dobru alternativu malim gazdinstvima u cilju sticanja dodatnih prihoda.
