Stvarni percipirani rizik - prehrambeni aditivi

Sažetak
Prehrambeni aditiv je svaka tvar poznatog hemijskog sastava koja se uobičajeno ne upotrebljava kao hrana sama za sebe, niti je tipičan sastojak hrane, bez obzira na prehrambenu vrijednost, a dodaje se namjenski radi tehnoloških i organoleptičkih svojstava hrane u tehnološkom postupku proizvodnje, tokom pripreme, obrade, dorade, prerade, oblikovanja, pakovanja, transporta i čuvanja, što dovodi ili se može očekivati da dovede do toga da on sam ili njegov sekundarni proizvod direktno ili indirektno postaje sastojak te hrane. Prehrambeni aditivi su nužnost u tehnologiji proizvodnje hrane. Njihova upotreba izaziva nepovjerenja potrošača i kontroverzu stručne javnosti. Negativan stav značajnog broja potrošača usljed nedostatka svijesti o zakonskoj regulativi, koja prethodi odobrenju prehrambenih aditiva, može se ukloniti kroz otvorenu, transparentnu, nezavisnu, odgovornu/pravovremenu komunikaciju o riziku. S druge strane, istraživanja o neadekvatnom označavanju, toksičnosti i upotrebi nedozvoljenih prehrambenih aditiva zahtijevaju kontinuirano praćenje, unapređenje sistema kontrole i uklanjanja nedostataka. Sigurna upotreba prehrambenih aditiva je zajednička odgovornost države, proizvođača, distributera, struke, odnosno laboratorija, ali i samih potrošača.
