Sažetak
Ovaj rad se bavi određivanjem mehaničkih osobina jabuke sorte Zlatni delišes (Malus domestica). Tekstura voća se obično ocenjuje na osnovu makroskopskih mehaničkih osobina celog ploda. Mehaničke osobine sorte Zlatni delišes ispitivane su u okviru grupe testova na pritisak. Test na pritisak je realizovan uređajem Andilog Stentor 1000. Pritisno opterećenje određeno je u uzdužnoj i poprečnoj ravni ploda. Modul elastičnosti odrđen je na dva načina. Prvi način zasnovan je na izračunavanju nagiba linearnog dela krive napon - deformacija, na osnovu regresione jednačine. Drugi način zasnovan je na Hercovoj jednačini za kontaktna opterećenja. Napon i deformacija određeni u 'bioyeld' tački i momentu razaranja ploda. Abstract
Paper dealt with the determination of mechanical properties of apple cultivar Golden Delicious (Malus domestica). Texture of fruit is commonly evaluated based on the macroscopic mechanical properties of the whole fruit. The mechanical properties of cultivar Golden Delicious were studied by means a compress test. The compress test was realized by test stand Andilog Stentor 1000. The compress load curves of the stress on the strain were evaluated of the longitudinal and lateral directions. The moduli of elasticity were determined by two different methods. The first method was based on the calculation of the slope of the linear part of the stress - strain curve by regression method from Young's law. The second method was determination of the apparent modulus of elasticity on the base of the Hertz equations for contact stresses used in solid mechanics. The stress and the strain were determined in the bio yield point and the rupture point of the compression load curves.
